Abstract Background Pineapple plant ( Ananas comosus ) is one of the largest productions in Asia and its increasing production has generated a huge amount pineapple wastes. stem made up high concentration starch which can potentially be converted into value-added products, including amino acids. Due to demand animal feed grade acids, especially for methionine lysine, utilisation cheap renewable source deemed an essential approach. This study aimed produce acids from hydrolysates through microbial fermentation by Pediococcus acidilactici Kp10. Dextrozyme was used hydrolysis Celluclast 1.5 L saccharification cellulosic materials stem. Results The obtained were lysine. showed content 77.78%. Lignocellulosic composition consisted 46.15% hemicellulose, 31.86% cellulose, 18.60% lignin.
